Filipino noodle dish.
Ingredients
  • 1 cup of chicken diced (uses left over rotisserie or poached chicken)
  • 1 tablespoon vegetable oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1/2 head of green cabbage or 2 cups of snow peas julienned
  • 2 carrots carrots julienned
  • 1/2 cup of dehydrated wood ear mushroom.
  • 1 package dried rice noodles
  • 2-3 chicken bullion cubes
  • 1 teaspoon of soy sauce
  • 1/2 lemon squeezed (about 1 tablespoon)
Instructions
  1. Soak noodles in water to re-hydrate (about 10 minutes) and drain.
  2. Soak mushroom in water (about 10 minutes) go re-hydrate. Julienne after rehydrating.
  3. In a hot pan on medium heat oil. Sauté garlic and onion for 3-4 minutes or until onions begin to soften. Season with salt and pepper.
  4. Add chicken and cook for 2-3 minutes.
  5. Add 1 cup of water. Add chicken bullion cubes and simmer for a 2-3 minutes, stiring to dissolve bullion.
  6. Add the noodles and soy sauce, mix with tongs. Cook for 2-3 minutes.
  7. Add vegetables, mix with tongs and cook for 5 minutes or until carrots and al dente.
  8. Squeeze lemon juice on noodles and mix.
  9. You can serve noodles topped with fried garlic and sliced green onions (scallions).
