Sesame Cucumber Salad

Ingredients
  • 2 Cucumbers
  • 4 Scallions
  • 1 tbsp Sesame Oil toasted
  • 1 tbsp Rice vinegar
  • 1 tbsp Sesame seeds toasted
  • 1 tsp Salt
Instructions
  1. Wash and dry cucumbers and scallions. 

  2. Thinly slice cucumbers. 

  3. Thinly slice white portions of the scallions. 

  4. In a large bowl, toss with sesame oil, rice vinegar and salt with cucumbers and scallions. 

  5. Sprinkle with toasted sesame seeds.

Recipe Notes

I prefer using english cucumbers for this recipe.  Add basil or cilantro for freshness.    Add chili flakes for a bit of heat.  Becuase this salad is dressed it only keeps for about a day.
