Pea Shoot Salad with Crispy Bacon and Blue Cheese

  • 4 cups pea shoots
  • 1 tbs olive oil
  • 4 slices bacon
  • 2 tbs blue cheese crumbles
  • 1 tps sea salt
  1. Cut bacon in to 1/2 inch lardons. In a frying pan on medium heat, cook bacon until crispy, remove from rendered fat and cool.
  2. Wash, pat dry and dress pea shoots with olive oil and sea salt. Toss salad with bacon and blue cheese.
  3. Enjoy!
