Chicken Tacos with Fire Roasted Red Peppers and Goat Cheese are a unique take on traditional chicken tacos. With bold flavors, you would never expect these tacos to be less than 350 calories for a two taco serving.

small log goat cheese

of vegetable oil

corn tortillas

lime

bunch cilantro

Roast Red Peppers

Cut peppers in half and remove pith and seeds.

Place peppers on a sheet pan and place under broiler for 10 minutes. Flip peppers after 5 minutes.

Remove from pan, let cool and slice thin
Tacos

In a large skillet over medium heat, heat oil.

Add onions and garlic. Cook until soft. Add peppers and toss until combined.

Remove from pan.

Add 2 teaspoons of oil to pan

Add chicken and spices. Cook 6-10 minutes, until browned and firmly cooked through.

Add sliced peppers and onions.

Serve with fresh tortillas and crumbled goat cheese.
I served with fresh limes and cilantro for garnish.
