Applebutter Porkloin Tenderloin with Roasted Apples and Vegetables

Ingredients
  • 1 pork tenderloin about 1.5 pounds
  • 2 firm apples cored and chopped
  • 2 celery ribs cut into 1 inch pieces
  • 2 carrots peeled and cut into 1 inch pieces
  • 1 onion peeled and cut into 1 inch pieces
  • 2 leeks washed and cut into 1 inch pieces
  • 1 teaspoon thyme
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 4 tablespoons butter cut into 8 pieces
Smoked Apple Butter
  • 2 cups spicy bourbon apple sauce or substitute any apple sauce you like
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
Instructions
Smoked Applebutter
  1. In a sauce pan mix ingredients together.
  2. Bring to a boil and cook for 15 minutes until applesauce thickens.
  3. Cool.
Porkloin
  1. In a bowl add apple butter and pork. Coat pork loin with apple butter then cover in a bowl and place in refrigerator for 30 minutes.
Pork Tenderloin
  1. Preheat oven to 425 degrees.
  2. In large greased baking dish or a baking dish lined with parchment paper, add apples and vegetables. Dollop apples and vegetables with butter. Remove pork loin from bowl and place on top of apples and vegetables. Season with thyme, salt and pepper.
  3. Cook for 35-45 minutes or until pork reaches 160 degrees.
  4. Remove pork from oven and let rest for 10 minutes. Slice into 1" thick pieces.
  5. In a bowl mix apples and vegetable with pan drippings.
  6. Serve pork with apples and vegetables
Recipe Notes

You can add any vegetables you like to this dish. If you desire to add a starchy vegetable I recommend sweet potatoes.

This recipe is 4 smart points for a 4 ounce serving of meat and a heaping 1/2 cup of vegetables. Adding more non starchy vegetables will only change the point count if more butter is added.
