Rib-eye with Red Wine Onions

Servings: 4
Ingredients
  • 4 rib-eye steaks about 1 inch thick
Rub
  • 1 tablespoon salt
  • 1 tablespoon cracked pepper
  • 1 teaspoon cayenne pepper
  • 1 tablespoon garlic powder
Red Wine Onions
  • 2 onion diced
  • 2 tablespoons butter
  • 1 cup red wine
  • 1 sprig thyme
  • 1 sprig rosemary
  • 1 clove garlic
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
Instructions
Rub
  1. In a small bowl, combine all rub ingredients.
  2. Adjust to your tastes.
Steaks
  1. Preheat Grill and remove steaks from refrigerator to bring to room temperature.
  2. Cover steaks evenly with rub on both sides.
  3. On a hot grill, cook for 4 to 6 minutes on each side for medium-rare, longer if desired.
  4. Remove steaks and let rest for 7-10 minutes.
Red Wine Onions
  1. In a deep pan melt on medium heat melt butter and let brown.
  2. Add onions and sauté in butter for 3-4 minutes.
  3. When onions being to soften, add red wine.
  4. Add herbs and garlic clove.
  5. Bring to a boil.
  6. Simmer and reduce wine by half.
  7. Remove garlic and herbs.
Plate
  1. Plate steak
  2. With a slotted spoon, top with onions.

Calories will vary depending on the size of the steak. A 4 oz steak typically has 350 calories with 1/4 of the onions served with it.
