Sweet Chili Chicken with Pineapple Fried Rice

Ingredients
  • 1.5 pounds boneless skinless chicken breast
  • 1 15 oz can crushed pineapple drained and juice reserved
  • 1/4 cup chili garlic sauce
  • 2 tbsp sesame oil
  • 1 jalapeno deseeded and diced
  • 1 tbsp ginger grated
  • 1 lime juiced
  • 1 tsp  chili flakes
  • 2 cloves garlic minced
  • 1 small onion diced
  • 1 bunch of cilantro chopped
  • 4 cups cooked long grain rice brown or white work equally well
  • salt and pepper
Instructions
Marinade
  1. In a plastic zipper bag, combine garlic chili sauce with pineapple juice.
  2. Add chicken breasts and let marinate in the refrigerator for a minimum of 2 hours.
Chicken
  1. In a skillet over medium heat,  heat 1 tbsp sesame oil.
  2. Add chicken breasts.  Reserve marinade.
  3. Cook chicken until brown, 3-4 minutes, then flip. Cook for 1-2 minutes.
  4. Add remaining marinade to the pan.  Cook for 7-10 minutes, until liquid, has reduced and thickened.
Fried Rice
  1. In a bowl combine jalapeno, onion, cilantro, chili flakes, lime juice, ginger, garlic and drained pineapple.  Season with salt and pepper.  Let sit for 10-15 minutes.  Drain any remaining liquid and reserve.
  2. In a hot skillet over medium heat, heat 1 tbsp sesame oil.
  3. Add rice.  Cook for 1-2 minutes until rice is heated.
  4. Add pineapple mixture.  Cook for 3-5 minutes until rice is a little brown.
  5. Add reserved liquid, cook for 1-2 more minutes until hot.
  6. Serve chicken over rice.
