Vegetarian Hoisin Lo Mein Noodles

Ingredients
Sauce
  • ΒΌ cup hoisin sauce
  • 1 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon chili garlic sauce more for more spice
Noodles
  • 1 pound lo mien noodle cooked al dente (you can use spaghetti as an altertive)
  • 1 eggplant cut into 1 inch pieces
  • 1 cup straw or shiitake mushrooms or a combination of both cut into large pieces
  • 1 cup baby corn cut into 1 inch pieces
  • 1 cup water chestnuts diced largely
  • 1 tablespoon sesame oil
  • 1 tablespoon crushed garlic
  • 1 tablespoon grated ginger
  • 3 shallots sliced thin
Instructions
Sauce
  1. Whisk all ingredients in a bowl and reserve
Noodles
  1. In a large wok or frying pan, heat pan then add oil. Turn heat to medium.
  2. Add garlic, shallots and ginger. Cook until shallots are soft.
  3. Add eggplant, corn water chestnuts. Cook until eggplant is soft.
  4. Add sauce and combine with vegetables
  5. Add noodles and combine until noodles are mixed with vegetables coated with sauce.
  6. Plate and Enjoy!
