Hashbrown Alternative

I love hashbrowns.  Actually, I love fried potatoes in just about most forms.  Hashbrowns are not necessarily diet friendly so I don’t eat them often.  I happened to stumble on a great alternative by accident.  I thought I picked up a box of Dr. Praeger’s veggie burgers but in fact they were broccoli pancakes.  


Ingredients:
Broccoli, Potatoes, Onions, Egg Whites, Oat Bran, Expeller Pressed Canola Oil, Arrowroot, Salt, Garlic, Black Pepper


If you use a little olive oil they get crispy on the outside just like hasbrowns.  They make a great a accompaniment to eggs and toast.  


Also, have you ever put jelly on your toast and then a fried egg?  Try it, the sweet savory combo is really good.  I’ve been loving guava jelly on wheat toast with an egg lately.
