Pulled Pork Tacos with Chipotle Crema

Ingredients
  • 1 pork shoulder roast bone in , 6-7 pounds
  • 1/4 cup rub
  • 1/2 cup bbq sauce choose your favorite
  • 1 avocado sliced
  • 1 onion sliced thin
  • 1 cup vinegar
  • 1/4 cup salt.
  • 1/2 cup sugar
  • 1 clove garlic
  • Chipotle Cream recipe here
Rub
  • 2 tablespoons salt, ground pepper, sweet paprika, paprika, garlic powder
  • 1 tablespoon mustard powder
  • 12 flour tortillas
Instructions
Pulled Pork
  1. Bring smoker up to 220-250 degrees.
  2. While smoker is heating up season pork shoulder with rub.
  3. When internal temperature reaches 180 degrees baste with bbq sauce.
  4. Smoke in smoker for 8-10 hours or until meat reaches 190-195 degrees.
  5. Remove from smoker and let rest for 1 hour. Shred.
Sweet n Sour Onions
  1. While roast is smoking make onions. In a small pan, bring vinegar to a boil.
  2. Add sugar and salt, keep on heat until dissolved.
  3. In a jar add onions and a clove of garlic. Pour hot mixture over onions.
  4. Let cool and then refrigerate for a minimum of 6 hours.
Tacos
  1. In a soft shell flour tortilla add 2 spoons of shredded pork.
  2. Top with a few onions and a slice of avocado.
  3. Drizzle with chipotle creama
