Late last fall Charlie bought a smoker and since then we have been smoking just about anything we can get our hands on. Our latest smoking adventure involved a pork shoulder roast that we brought to a small dinner party over the holidays. If you know anything about pork shoulder roasts you know they can feed army so we had plenty of leftovers to eat the next day. Instead of pulled pork sandwiches round 2, I decided that the meat would taste delicious with tortillas and chipotle crema.
I was not wrong. These tacos were AMAZING!!! First, the pulled pork was succulent which melted into pillowy soft flour tortillas. The chipotle crema added a nice kick. I served them with some sweet n’ sour pickled onions (I canned them this summer) and sliced avocado. The onions added a nice tang and the avocado calmed the heat of the chipotle.
Pulled Pork Tacos with Chipotle Crema
Ingredients
- 1 pork shoulder roast bone in , 6-7 pounds
- 1/4 cup rub
- 1/2 cup bbq sauce choose your favorite
- 1 avocado sliced
- 1 onion sliced thin
- 1 cup vinegar
- 1/4 cup salt.
- 1/2 cup sugar
- 1 clove garlic
- Chipotle Cream recipe here
Rub
- 2 tablespoons salt, ground pepper, sweet paprika, paprika, garlic powder
- 1 tablespoon mustard powder
- 12 flour tortillas
Instructions
Pulled Pork

Bring smoker up to 220-250 degrees.

While smoker is heating up season pork shoulder with rub.

When internal temperature reaches 180 degrees baste with bbq sauce.

Smoke in smoker for 8-10 hours or until meat reaches 190-195 degrees.

Remove from smoker and let rest for 1 hour. Shred.
Sweet n Sour Onions

While roast is smoking make onions. In a small pan, bring vinegar to a boil.

Add sugar and salt, keep on heat until dissolved.

In a jar add onions and a clove of garlic. Pour hot mixture over onions.

Let cool and then refrigerate for a minimum of 6 hours.
Tacos

In a soft shell flour tortilla add 2 spoons of shredded pork.

Top with a few onions and a slice of avocado.

Drizzle with chipotle creama
If you don’t want to prepare your own pulled pork you can defiantly use pre made. Or you can make your pork in the oven or slow cooker. You can also substitute pulled chicken.
I recommend serving them with my Spicy Cheateritas for a real treat.
