Starting Over for the 3rd time this year!

That’s pretty much what I need to do AGAIN.

My chest is getting better every day. I’m going to try to run on Wednesday…I’m starting AGAIN with one mile and building a mile a week. It will be 2 full weeks since I crashed and I should be good to go by then. I have compressed my training schedule AGAIN and taken out some of the off weeks. I’m going to be running on the 4th of July weekend. Oh well.

My food find of the week is not a new thing..its Tofu.

I have to say that I’m really not a big of it. I do like it fried..crispy with dipping sauce but that is not exactly healthy and I like it in Pad Thai. However, I eat it because its filling, has protein and its low fat. I made it last week for taco Tuesday. I diced 1 brick of extra firm tofu, 1 red, 1 green and 1 yellow pepper with 2 jalapeno peppers and an onion. I stir fried with garlic, cumin, oregano, green chillies. With corn shells, some guacamole and ff Greek yogurt is quite tasty. It a nice deviation from Asian stir fry that I normally make.

    omg…sorry to hear about the crash, but I’m glad you’re feeling better!! and about starting over, hell, every day we all start over. It’s how everyday is a new day! 🙂 I’m looking forward to dinner on the 25th!!

    My Chinese Restaurant mixes Chicken and Tofu all the time. I just don’t like it.

    I’m glad you are feeling better after the crash.

    BTW, this looks like silken tofu, the kind in aseptic packaging, and if that is what you tried then I would agree as I only like it for dips and puddings and blended things.

    The regular tofu, like the kind they sell at Trader Joe’s and Whole Foods in the refrigerated section is much better IMHO.
