 I hosted a  “diet” pot luck lunch today.  Everyone one who came brought a great low fat, low calorie dish to share.  For once, it was nice to throw a party where I was not running around like a nutter trying to get all the food out, HOT and not overcooked.   I could get use to this whole pot luck thing.

I made “Enchalasagna”.  I was going to make enchiladas but the corn shells were dry and breaking when I rolled them.  So I laid them flat and layered like lasagna, it all goes to the same spot anyhow.  I mean, aren’t stuffed shells a different shape of lasagna?

We had a really nice time and it was fun to taste other peoples dishes.  Our menu included:

Salad with pear and danish blue cheese tossed with a Dijon vinaigrette
Zucchini Pancakes
Mexican Pasta
Enchalasagna
Banana Bran Muffins
Veggie Quiche
Watermelon;
Philo mouse cups
banana bread
Cappuccino Angle food cake with whipped cream and strawberries

Truth be told, I threw this on to go walk the dog before everyone arrived.  I was going to change into a sundress but I just didn’t feel like it.  Eh, its Sunday, at least I showered and I’m not wearing sweats.

 Funday Sunday ended with a long walk to the lake and back with pooches.  It was the perfect way to burn off all those calories I ate today.  Addison is now exhausted.

    Which I am guessing you made with ribbon and your very own brooches ?
    WOW!! this is a super neat idea.
    BTW… I am still waiting for the DIY belt with the ties..
