Poached Pears

While I love a decadent desserts sometimes I just want something light and fruity. Poached pears are that perfect sweet treat.  You can simply serve them with a few toasted almonds or, if you want more decadence you can add a scoop of ice cream or a dollop of whipped cream.

Ingredients:
4 firm Pears (I like to use  D’Anjou)
2 1/2  cups of Amaretto
1/4 cup brown sugar (I like Domino)
 
makes 8 servings
 
Directions:  
Peel, core and cut pears into quarters.  In a large sauce pan or pot bring Amaretto to a boil.  Stir in brown sugar.  Add pears and simmer for 15-20minutes, until tender but still firm.  Remove pears.  Cook liquid for 15 more minutes.  
 
Serve pears and drizzle with 2 tablespoons of sauce.

You can make poached pears ahead of time a reheat.
