Sweet potato chicken chili

I had an extra sweet potato laying and I knew I also wanted to make chili.  This could have been culinary chaos but it turned into delight dish.  I didn’t make it super spicy as I didn’t want to over power the chicken or the sweet potato.  You can alter you spices to your liking. 

Ingredients:
2 chicken breasts (boneless skinless)
1 large sweet potato
1 can of black beans
1 can of chili beans
1 large can of diced or crushed tomatoes with garlic
1 onion
paprika
chili pepper (I used whole, but you can use flaked)
cumin

Brown chicken and onion

Add sweet potato and brown slightly

Add tomatoes and beans (with liquid) and 1 can of water

Add 1-2 TBS of paprika and cumin (adjust spices as you like, you can also you chili powder)

Add 2-3 whole dried chili peppers

Simmer for 1 hour

Finished chili will thicken.

Serve with traditional chili fixings and enjoy
