Easy Flatbreads

As the weather heats up and summer approaches, I prefer spending more time outdoors enjoying the fresh air and less time in the kitchen cooking.  Quick, fresh and tasty meals are often hard to keep healthy.   Flatbreads with seasonal ingredients are a great solution to that problem.

Topping a high fiber crust with fresh produce and calcium rich low fat cheese is not only healthy it tastes delicious.   I like using creative combinations of fresh herbs, fruits, vegetable and lean meats.  One of my favorite combos is fresh apricots, ham and basil.  It meets all my likings, sweet, savory, salty and fresh.  If you want a vegetarian option, you can skip the ham.

Ingredients:

1 high fiber flatbread
1 apricot (diced)
3 basil leaves (chopped)
1 slice ham (diced)
1 tsp olive oil
1/3 cup low fat mozzarella

Directions: 

Preheat over to 400 degrees.

On a thin flat bread (I like Flatout Spicy Italian) drizzle oil oil.  Spread apricots, basil and ham on flatbread.  Top with cheese.

On a piece of parchment paper (or a greased cookie sheet) cook flatbread in over for 5-7 minutes or until cheese is melted.   Let flatbread cool on cooling rack, slice.  Serve with a great salad.
