Yogurt Shrimp Salad

I’m always looking for filling snacks that contain protein.  This greek yogurt shrimp salad hits the spot with protein rich shrimp, lots of dill, creamy greek yogurt and tangy mustard.  Each serving has 19 grams of protein and a healthy dose of probiotics.    It is filling but it doesn’t weigh me down or make me feel sluggish.   

This satisfying shrimp salad makes a great snack not only for the protein but also for the nutrients found in the shrimp.  Shrimp have astaxanthin which is an antioxidant and anti-inflammatory nutrient may be beneficial for cardiovascular, immune, inflammatory and neurodegenerative diseases.  Shrimp are also an excellent source of the antioxidant mineral selenium.  Selenium deficiency has been shown to be a risk factor for heart failure and other forms of cardiovascular disease.  

Shrimp also contains omega-3 fat.  Omega-3’s are important for cardiovascular and nervous system health.  

Shrimp Salad on Cracker

The dish is  very versatile and can quickly be made into a complete lunch.  Double the serving, add a few high fiber crackers and a piece of fruit for a lunch that will keep you satisfied until dinner.   It also makes a great salad topper or sandwich filler.

Ingredients

  • 1 lb cooked shrimp cut in halves
  • 1 small onion diced
  • 2 stalks of celery diced
  • 1/2 cup dill chopped
  • 1/2 cup Greek yogurt
  • 2 tbs mayonnaise
  • 1 tsp lemon juice
  • 1 tbs garlic powder
  • 1 tsp mustard powered
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Mix ingredients gently to combine. Serve chilled.

Recipe Notes

  • The mayonnaise is optional but adds a nice tangy and extra creamy texture.
  • Substitue Dijon mustard for mustard powder
  • Substitue apple cider vinegar for lemon juice
