Green Chorizo and Red Pepper Frittata

Last week I spied some green chorizo at the butcher shop and decided I wanted to make a special dish out of it.   Green Chorizo (which I prefer over the red kind) is made with tomatillo, cilantro, chili peppers, garlic giving it a fresh flavor with a bit of kick.  It is different from the red stuff which has more of smokey flavor.  Green chorizo in my opinion is more mild but has great flavor to pair with eggs making it a prefect ingredient for a frittata.   So, in celebration of Father Day last weekend I cooked up this special Green Chorizo and Red Pepper Frittata for my fur baby daddy.

I melded the flavors of the chorizo with potatoes, red peppers, shallots, parsley and chives.  I topped it with a bit of cheese for a tad of salt and creaminess.  What I love about this dish, maybe even more than the flavors, is the fact that you can make it in one pan.  One pot cooking!!!  One pan to clean, hip hip hooray! this is my idea of awesomeness.  And I must also mention, the leftovers are awesome and they reheat well.  I love making breakfast sandwiches out of the leftovers with a toasted english muffin.

Green Chorizo and Red Pepper Frittata

Green Chorizo and Red Pepper Frittata
Prep Time 20 minutes
Cook Time 20 minutes

Ingredients

  • 1 links of green chorizo about a 1/2 pound
  • 1 red pepper sliced thin
  • 1 russet potato peeled and sliced thin
  • 2 shallots sliced thin
  • 2 tbs fresh parsley chopped
  • 2 tbs fresh chives copped
  • 10 eggs
  • 1/4 cup of shredded cheese mozzarella or gouda preferably
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. In medium size bowl, whisk eggs.
  3. Remove casing from sausage and break into small pieces.
  4. On medium heat, brown sausage. When about 1/2 the sausage is brown add potatoes.
  5. Cook for 3-4 minutes. Add peppers and shallots. Cook for an additional 3-4 minutes until vegetable begin to soften.
  6. Add salt, pepper, parsley and chives then add eggs and top with cheese. Continue to cook for 2-3 minutes or until eggs begin to set.
  7. Place pan into oven and broil for 5 to 7 minutes, until lightly browned and fluffy.
  8. Let cool for 5 minutes. Cut into 4-6 servings. Enjoy!

Recipe Notes

You can substitute regular chorizo if you cannot find green chorizo.
You can substitute a small onion for the shallots.
This recipe reheats well. I love it on an english muffing for a quick breakfast sandwich.

If you’re counting calories, or looking to lighten this dish up you can substitute half the eggs for egg whites and omit the cheese.  Even with these tweaks, the dish will still have great flavor.
