Morning Fuel

On the weekends I like to eat a “hot” breakfast.  This means, I cook an egg usually.  Egg tacos/burritos and omelets are a Sunday staple.  Every so often a do whip up french toast or pancakes, but only when I’m craving sweets and have bacon or sausage to serve with them.

To fuel my Saturday morning I made a quick egg sandwich.

1 Bagel Thin (I would not buy these again, see below)
1 egg ( I flip but the yolk is still oozy)
1 tomato Roma tomato sliced
2 tsp of guacamole (I used 2 tsp of prepackaged guacamole because the store was out of ripe avocado on Tuesday and its hard to ripen an avocado in an hour for dinner, normally I have 2 slices of avocado)
1 slice of onion
2 sprigs of fresh cilantro
Salt and Pepper to taste

4 points for the whole sandwich, filling and tasty.  I also really like the follow flavor combos with an egg and between two slices of bread (English muffin or thin sliced bread)…

1 Laughing Cow light or 2 boccie balls (the small ones) of fresh mozzarella sliced, 1 Roma Tomato, 2 leafs of basil

1/2 slice of light Swiss cheese, 1 Roma tomato,  1 slice of ham ( you can double up on the ham and cheese and skip the egg)

1 slice of bacon or ham, 1 tsp of maple syrup, 1/2 slice of light cheddar cheese or Havarti

So about these bagel thins…and this goes for sandwich thins..I had this Epiphany today, why not just buy thin sliced bread at the bakery?  I remember as a kid my Great Aunt Martha and Great Aunt Gertrude would buy THIN sliced bread at the bakery and make sandwiches from it.  It was kind of a joke …”you could read through the bread.”  Today, I’m paying a stupid amount of money for “sandwich thins.”   Really, what a sucker I am.  How about I just ask the bakery to …slice a loaf of whole wheat bread thin just like my aunts use to to?  DUH!  I guess Martha and Gertrude were visionaries, before their time.

    I think bread has just gotten more oversized along with us. Thin sliced bread is most likely what we grew up with.

    These days, I routinely just make 1/2 a sandwich. The bread is only a vehicle anyway….
