Healthy 15 Minute Pasta Dinner

When it comes to pasta portion control is key, well at least for me.  Not only is portion control key, but also controlling the amount of fat that goes into the sauce when I make it.

Withe peppers and tomatoes in season you can’t go wrong with this quick pasta dish.  From start to finish this dish takes about 15 minutes.  Its super healthy and tastes fantastic.

In a skillet, saute diced onion,  peppers and tomatoes in about 1 TBS of Olive Oil.  Put water on to boil pasta.

After 2-3 minutes add garlic (I was out of fresh so I used garlic powder), some crushed red pepper.

Boil Pasta.  I recommend fresh pasta.  I buy  RP’s Pasta at Whole Foods.  The packages are 3oz and help with my portion control issues!

Add pasta and fresh oregano and basil.  Toss.

Top with fresh grated Parmesan and serve with a fresh piece of crusty bread.

    Nice dish. I eat some version of this once or twice a week.

    I always prepare mine with fresh garlic and frequently add strong flavors like Tamari, jalapenos or anchovies. Using tomatos reduces the need for oil or other fat.
