Leftover Taco Soup

I tend to eat lunch at my desk quite often and left over tacos tend to be really messy.  Sometimes I throw together a taco salad but in the winter I tend to like a hot lunch.  Because there are starving people in Africa and we should not waste food throwing out food is wasteful I invented this easy soup that uses my chicken taco leftovers.

1 cup chicken taco leftovers (recipe here)  (pictured above I adapted the recipe and used yellow, red and green peppers instead of fire roasted red peppers)
1 cup black beans (leftover from taco dinner too)
1 small can green chilies
1/4 cup chopped cilantro (if you make fresh salsa you could use any leftovers in the soup too)
4-6 cups chicken or vegetable stock (depends how soupy you like your soup)

Put in pot, bring to boil simmer for 10 minutes.  Super easy, uses up your leftovers and freezes well.

    Yum! I feel warmer just looking at this. And I can always use a good “using up leftovers” recipe–I’m bad about that!
