Tacos are a huge staple in my diet. They are tasty, quick and pretty healthy. I really like this basic quick taco recipe for nights when I don’t feel like cooking.
Taco Meat
1 lbs diced chicken breast
1 Tbs olive oil
hand full of chopped cilantro
1 small diced onion
1 tbs cumin
1 tbs paprika
2 tps garlic
2 tbs of chopped chives (optional)
1 jalapeno chopped (optional)
Cook meat with veggies and spices in 1 tbs olive oil.
Bean and Corn Relish
1 cup frozen corn
1 can drained black beans
1 can green chilies
1/8 cup water
Bring to boil, simmer for 10 minutes
On a tortilla place a scoop of the chicken taco meat, a scoop of the bean and corn relish (drained), top with your favorite taco fixings (I like sour cream and guacamole)

Ooh, those look good! I love tacos too–they’re so versatile! I don’t think there’s been a taco I didn’t like–fish tacos, chicken tacos, pork tacos… all good!
