Shaved Brussel Sprout Salad with Pecorino

I love brussels sprouts.  I always had them cooked as a kid and liked them drenched in butter.  A few years ago I went to the Purple Pig and discovered the wonder of raw brussels sprouts shaved as a salad.  It was mild, crispy and creamy.  I could have eaten several orders of it.  The next week I went home and tried to recreate the recipe.  After several tries, I have come to love my own rendition of their delicious salad.

Shaved Brussel Sprout Salad with Pecorino

Prep Time 20 minutes
Cook Time 20 minutes
Servings 6 servings

Ingredients

  • 1/2 small red onion
  • 4 cups brussels sprouts use larger sprouts if possible
  • 1 tsp of sherry vinegar
  • Juice of 1/2 lemon
  • 2 tablespoon olive oil
  • 1/2 cup finely grated pecorino cheese
  • Salt and freshly ground black pepper to taste

 

BS Mandonline

Grate brussels sprouts (I like to use a mandolin)

BS Mandoline Onions

Grate onion.

BS Lemon

Squeeze a 1/2 lemon in the vegetables

BS Peccirino

Add a 1/2 cup of pecorino cheese

BS Sherry Vinegar 
Add 1 tsp of Sherry Vinegar
BS Olive Oil
Add 2 TBS of olive oil
BS Mix
Salt and pepper to taste and mix well
BS Salad
Enjoy!

    RPM Italian makes a brussel sprout salad, as well. This looks good, I’ll have to give it a try!
