Italian Barese Sausage Soup

Barese sausage is an Italian sausage but it is different because it is not made with fennel. 
Barase sausage is typically made with  pork, herbs (parsley and basil)  garlic, cheese (parmesan or romano) and some tomato product (paste, plum or sun-dried).  It is a flavorful sweet and mild sausage.

I know what you are thinking, sausage in soup?  Doesn’t that add a whole lot of fat and calories?  My answer is yes BUT…BUT…the rest of the soup is SOOOOOOOOOOO HEALTHY you can indulge in the sausage.  Also, the sausage serves as the only fat that is added to the soup.   If you review the nutrition information, the soup has protein, a ton of Vitamin A and Vitamin C and it only has 155 calories per cup. 

This soup has two power ingredients, zucchini and canellini beans.

Zucchini has very few calories.  One cup has 36 calories and 10% of the RDA of dietary fiber.  Zucchini helps lower cholesterol by attaching itself to bile acids that the liver makes from cholesterol for digesting fat.  Zucchini has vitamins C and A which are powerful antioxidants and are effective as  anti-inflammatory agents. 

Cannellini beans metabolize slowly, and provide steady energy for hours after eating them.  Studies show that beans like cannellini may provide protection against colorectal adenomas.  Colorectal adenomas are benign tumors that have the potential to become cancerous. And, they are also an antioxidant.

Italian Sausage Soup Ingredients


Ingredients:
1 pound Barese Sausage (cut into small bite sized pieced) (you can substitute regular Italian Sausage or Turkey Italian Sausage)
2 cups Spinach (chopped)
2 Carrots (diced)
1 can Stewed Tomatoes
1 can Canellini beans
4 cups Beef broth
2 zucchini (diced)
1 clove garlic (minced)
4 tablespoons parsley (chopped)

makes 8 servings

Italian Sausage Soup Browing Sausage

In a stock pot, heat pot and brown sausage.  Then add tomatoes, beef broth, garlic and bring to a boil.

Then add carrots, zucchini and parsley.  Simmer for 15 minutes then add beans and spinach. Simmer for another 15-20 minutes.
