I love a good meatball with a spicy tomato sauce. The best part of this recipe is that we eat half and freeze the other half for another meal.
Ingredients
Meatball
1 lb ground veal
1 lb ground turkey
1 cup bread crumbs
2 TBS oat bran
1 large diced onion
2 eggs
3 TBS chopped parsley
1/4 cup grated Parmesan or Pecorino cheese
2 large cloves of garlic
1 tsp of salt
1 tsp of pepper
Sauce
2 cups tomato sauce (you can used canned or homemade. Mine came from the garden tomatoes that I canned this summer)
1 crushed garlic clove
1 TBS hot chili flakes
Makes 8 servings
Preheat oven to 400 degrees.
In a bowl, add all the ingredients.
Wash your hands well and mix.
Form into 1 inch balls (about a 1/4 of a cup). Place on baking sheet an cook for 45-50 minutes. While meatballs are cooking place sauce ingredients into a sauce pan, bring to a boil then simmer.
When meatballs are done cooking, let rest for 10 minutes, top with sauce then enjoy!

There are pretty versatile and can be made with brown gravy or BBQ sauce too.
