I love avocados. Truth–I could eat them every day. And while they are high in fat, they are heart healthy. Avocados are high in beta-sitosterol, a compound that has been shown to lower cholesterol levels. Avocados have folate and studies have shown that people who eat diets rich in folate have a much lower incidence of heart disease than those who don’t. Avocados also are rich in vitamin E, monounsaturated fats, and glutathione which are also great for your heart.
This salad is so easy and so good. The celery is crunchy, the corn is sweet and the avocado is rich and creamy.
4 stalks of celery (chopped)
1 avocado (sliced)
1 ear of raw sweet corn (removed from the cob)
1 tbs olive oil
salt and pepper
makes 4 serving
Arrange avocado, corn and celery on a serving plate. Squeeze the juice from the lime and drizzle the olive oil over the avocado, corn and celery. Salt and pepper to taste. That is it, your done!
