Herb Lamb Kabobs with Scallion Dill Yogurt Sauce

When you think of what type of meat to eat when you are trying to eat WELL most people think of chicken, turkey and lean beef. Yes, those meats are lean, versatile and readily available in most grocery stores.  But, I think that changing up your protein routine can help your diet not become stagnant and boring.  Lamb is an excellent source of high quality protein.  Lamb protein is nutritionally complete, with all 8 essential amino acids in the proper ratio. A three ounce serving provides 43% of an adult’s recommended daily allowance (RDA) for protein.

Lamb is also a good source of easily absorbed iron,   Iron is vital in the formation of red blood cells. Lamb is rich in zinc which is essential for growth, healing and a healthy immune system.

Lamb is not marbled (fat in the meat) like beef. Over half of the fat in lamb is unsaturated and most is  monounsaturated, commonly found in a healthy Mediterranean-type diet

Lamb contains the fat that is good for you, consumed directly as part of the essential omega-6 fatty acid arachidonic acid (AA), a liquid unsaturated acid.  Most of the lamb’s fat is on the outside edges and can easily be trimmed.

So the next time your perusing the meat counter give lamb a try.  

Lamb marinade

Ingredients:
1 lbs leg of lamb (cut into 1 inch chunks)

Marinade
4 tbs parsley
2 tbs soy sauce
2 tbs olive oil
1 tbs sherry vinegar (you can use white vinegar or red wine vinegar or 1 tbs of lemon juice)
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp dried mustard (you can use 2 tsp of any type of non sweetened mustard)
1/4 cup of water

makes 4 servings

Lamb Rady to Grill

Marinade meat for 1 hour in the refrigerator then place on skewers for grilling.  While meat is marinading make the yogurt sauce. 

Herb Yogurt Sauce Ingredients


Yogurt Sauce:
1 cup Greek yogurt
2 Scallions (finely sliced)
3 tbs Parsley (chopped)
3 tbs Dill (chopped)
2 tbs Olive oil

1 tsp Salt

makes 4 servings

In a bowl, whisk olive oil,salt and yogurt together.  Then stir in dill and scallions.

When meat is ready, grill for 6 minutes on each side.  Serve lamb with yogurt sauce and a slice of lemon.
