Spicy mango guacamole

I’ve talked about the health benefits of avocado before.  I love substituting mango for tomatoes in guacamole.When you combine mango with avocado you have a powerhouse food high in fiber, vitamin C  and A.

mango guacamole ingredients

Ingredients:

1 avocado
1/2 cup mango (diced)
1 jalapeno pepper (seeded and diced)
3 tbs cilantro (chopped fine)
1 green onion (chopped fine)
juice from 1 lime
1 clove of garlic (minced)
salt and pepper to taste

Directions:

Cut the avocados in half  and twist the halves in opposite directions to loosen the pit.  Pull apart and  scoop the avocado flesh into a large bowl.  Toss the pit in the garbage.  Coarsely mash the avocado with a fork. Mix in onion, garlic, jalapeno pepper, cilantro and lime juice.

Mix in diced mango.  Salt and pepper to taste.

It is sweet, tangy, and SPICY!  Its is great with chips or as a topper for tacos.
