Sometimes the most simple of salad are are the most delicious. Let the flavor of the vegetables shine though I say!
1 bell pepper (sliced)
1/4 onion (sliced)
3 cups of cherry tomatoes (cut in half)
2 TBS Olive Oil
2 TBS of Balsamic
Salt and Pepper
makes 4 servings
In a bowl, toss sliced bell pepper, onion and tomatoes with oil. Plate vegetables and drizzle with Balsamic. Salt and pepper to taste.
