Beets are one of my favorite vegetables.  I love them hot and cold, in salads or as a side dish.  Like carrots, they are a versatile vegetable that can be eaten as a sweet or a savory.  I love adding a beet to my berry smoothie for an iron boost.

Ingredients:
1/2 cup mixed berries (frozen)
1 cooked and peeled small red beet  (equivalent to 1/2 cup)
1 cup unsweetened almond milk or coconut milk
1 tbs ground flax seeds (I really like the Spectrum ground flax seeds with berries)
1 tsp agave nectar

Directions:
Put all ingredients into a blender and blend until smooth.

Sometime I like to add a scoop of vanilla protein powder for extra lasting energy.

Enjoy!

can I use canned beets? I never mastered roasting beets. I am a beet flunky.

As long as they are not pickled. I also found pre cooked and peeled ones in the refrigerator section.
