Coleslaw is one of my favorite foods.  I love it;  crunch, tangy and creamy.  Slaw ranks right up there with pizza, mac n’ cheese and bread + butter.

Coleslaw is easy to make and is the perfect accompaniment to grilled meat, BBQ or sandwiches.  A few simple ingredients and you have the prefect side dish.

Classic Coleslaw

Prep Time 11 minutes
Cook Time 11 minutes

Ingredients

Slaw:

  • 1 small head cabbage shredded
  • 2 to 3 large carrots shredded in very thin matchsticks
  • 1 small onion finely sliced

Dressing:

  • 1 cup mayonnaise
  • 1 tablespoon sugar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt

Instructions

  1. In a medium bowl whisk dressing ingredients together.
  2. In large mixing bowl add cabbage, onions and carrots.
  3. Pour the dressing over the cabbage, onions and carrots. Toss to combine making sure the slaw is evenly coated.
  4. Refrigerate for at least 1 hour before serving.

How to shred cabbage with a knife

  1. Cut the cabbage to quarters, core and remove outer leafs.
  2. Slice crosswise into thin shreds or run through a food processor with a shredding blade.
