Roasted Plantains with Onions and Mojo (Garlic Sauce)

Plantains Mojo Last week Charlie sent me some really complicated recipe for plantains…it required 50 steps and a zillion ingredient.  Okay maybe only a million ingredients.  Needless to say, it was complicated and time consuming and I didn’t make it.  But I’m not a plantain scrooge so  I made them my way, the simple way. 

Since plantains are more like a potato than a banana I decided to roast them in the oven with a little onion, garlic and oil.  The plantains I used were Pinton (yellow with a few brown spots).   They were still firm but a little sweet.  They turned out fantastic.

Roasted Plantains in Garlic (Mojo) Sauce

Prep Time 11 minutes
Cook Time 11 minutes
Calories 116 kcal

Ingredients

  • 5 large plantains peeled and cut into 1" cubes
  • 1 large onion sliced
  • 2 gloves garlic crushed
  • 1 tsp ground cumin
  • 1/4 olive oil
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Preheat oven at 400-degrees.
  2. In a bowl place plantain and onions. Mix in oil, cumin and garlic.
  3. Place plantains and onions in a baking dish, add mix
  4. Bake 20 minutes, flipping the pieces over halfway through the baking.
  5. Salt and pepper to taste.
  6. Enjoy!
