Seasame Noodle Salad

I’m an expert in whipping up a meal using what I have in my cabinets.  I originally made this simple noodle salad one night with a grilled chicken breast.  I found the noodles hiding in the back of the cabinet and had leftover peppers, onions and limes from the fajitas that I had made the night before.  You could add just about any vegetable in this recipe and it would taste great. Peanuts or almonds would also make a nice addition.  Don’t have basil, substitute cilantro.  Don’t have rice noodles, use wheat pasta.

Best part of this salad, it tastes great either warm or cold.  The first time I made this salad, I tossed some chicken into the noodles for leftovers and ate it cold at work the next day. It was some of the finest desktop dinning I have ever had.

Sesame Lime Noodle Salad

Prep Time 11 minutes
Cook Time 11 minutes

Ingredients

Salad:

  • 1 package thin rice noodles
  • 2 large carrots cut into matchsticks
  • 6 green onions thinly sliced
  • 2 bell peppers thinly sliced

Dressing:

  • 2 tbs lime juice
  • 1/3 cup sesame oil
  • 1/4 cup thai basil leaves thinly sliced in ribbons (Chiffonade)
  • 1 tsp salt
  • 1 tsp ground white pepper
  • Additional basil leaves for garnish

Instructions

  1. Cook noodles until al dente.
  2. While noodles are cooking, in a small bowl whisk together lime juice, sesame oil, salt and pepper.
  3. Drain noodles and add vegetables and basil. Toss noodles with dressing until throughly combined.
