I always try to serve a vegetable with dinner, be it in the dish or on the side. Lately I’ve been in a rut with my go-to’s roasted vegetables or salad. Last week at the grocery store I picked up a package of broccolini with the goal of not shoving in the oven and roasting it with olive oil, salt and pepper. I also picked up a bag of Meyer lemons.
Meyer lemons are the royalty lemons. Not only do they have more juice than a normal lemon the skin is editable. I was really tempted to roast the brocclini with lemon slices because I think that would be amazing. But instead a pan sautéed it with butter and dressed it with an amazing honey lemon sauce.
This dish has the trifecta of awesomeness: sweet + salt+ acid. It also tastes great cold and would make a lovely cold side dish in the summer.
Meyer Lemon Honey Butter Broccolini
Ingredients
- 1 lb broccolini
- 2 tablespoons butter
- 4 Meyer lemons juiced
- 1 tablespoon honey
- 3 teaspoons salt.
Instructions

In a large skillet add 1/2 cup of water, 1 teaspoon salt and 2 tablespoons of lemon juice and bring to a boil. Add broccolini and blanch for 1 minute. Drain and reserve broccolini.

In small bowl combine lemon juice, honey and salt.

On medium heat melt butter. Add broccolini and cook unit tender turning frequently, about 4 minutes.

Plate broccolini and drizzle lemon honey mixture over the top.
