Watermelon Lemonade


There is no denying it, we are in the dog days of summer in Chicago. It’s predicated that temperatures will soar to almost 100 degrees this week.  Keeping hydrated is a necessity when the temperatures skyrocket and there is nothing more refreshing than a frosty cold glass of lemonade on a super hot day. 

Watermelon Lemonade

The downside of drinking lemonade is that it is normally loaded with sugar.  A basic lemonade recipe uses a ratio of  1-1-4: sugar, lemon juice, water respectively.  However, this lemonade uses NO sugar.  It is sweetened with stevia syrup. The  slightly frozen watermelon cubes are used instead of ice cubes add an extra touch of sweetness. Not only do you get a delicious fruit snack but the lemonade doesn’t become watered down from melting ice. If you so inclined you can make and adult version by soaking the watermelon in vodka or tequila while freezing. To simplify the process, you might want to use the best cold press juicer for easy extraction of fresh lemon juice.

Another key reason this watermelon lemonade is so delicious is the stevia syrup.  Most sugar free juicing recipes just add artificial sweetener to the mix.  With this recipe you make a syrup with stevia and lemon rinds.  The syrup has rich lemon flavor from the oil extracted from the rind.

No Sugar Watermelon Lemonade

Cook Time 20 minutes

Ingredients

  • 1 cup lemon juice
  • peel from two lemons piths removed
  • 2 teaspoons stevia
  • 9 cups water
  • 8 cups diced seedless watermelon

Instructions

  1. freeze watermelon for 1 hour prior to serving

Lemonade

  1. In a sauce pan add 1 cup water, stevia and lemon peel.
  2. Bring to boil and let simmer on low for 5 minutes.
  3. Remove lemon rind and cool liquid.
  4. In large picture add lemon juice, stevia syrup and water. Stir until combined.
  5. Chill for 2-3 hour or longer.
  6. In a large glass add 1 cup of watermelon cubes and pour lemonade over cubes.
  7. Enjoy!

If you want you can make an “adult” version of this recipe soak the watermelon in 16 ounces of vodka or tequila while chilling in the freezer. That will add additional calories/points to this recipe.

    This recipe is amazing. I like that you froze watermelon cubes to serve as ice cubes. I personally love the combination of watermelon and citrus, so I know I’ll love this recipe. The diabetics in my house will appreciate that this is sugar free. It’s great that it’s a natural sweetener, too.
