Spinach is a super vegetable in my book.  As you know spinach has a ton of health benefits.

But the greatest benefit of Spinach, it cooks up in about 2 minutes.

I love spinach just plain but by adding some good quality olive oil, garlic and nutmeg you will get several added bonuses.

Olive Oil has a high concentration of monounsaturated fatty acids, which studies show promote “good” cholesterol (HDL) while lowering “bad” cholesterol (LDL).  It is easy on your gut and studies have shown it may prevent gallstones and soothe ulcers.  It also has several antioxidants which help in keeping you skin young and cancer free.

Garlic promotes a healthy immune system and strengthens the body’s defenses against disease.  A sulfur compound in garlic, allicin,  is produced when garlic is chopped, chewed, or bruised. Allicin is an antibiotic; it is said that 1 milligram of allicin has a potency of 15 standard units of penicillin.  Also, several studies confirm that garlic can reduce cholesterol.

Nutmeg has strong antibacterial properties. It is effective in killing some cavity-causing bacteria in the mouth.  The compound myristicin is found in nutmeg and has been shown to inhibit an enzyme in the brain that contributes to Alzheimer’s disease and is used to improve memory

Garlic Spinach with Nutmeg

Cook Time 20 minutes

Ingredients

  • 6-8 cups fresh spinach chopped  (I like to keep the stems on for crunch)
  • 1 tbs olive oil
  • 1 tsp ground nutmeg
  • 1 tsp salt
  • 2 cloves garlic minced

Instructions

  1. In a pan heat oil.  Add garlic to hot oil and cook for 1 minute.  Add spinach,
  2. Add garlic to hot oil and cook for 1 minute.  Add spinach,
  3. Add spinach, salt, and nutmeg.  Cook until wilted, about 1-2 minutes.
