Sesame Soba Noodles

Sesame Soba Noodles are easy to make, downright delicious and healthy because they are made from whole grain buckwheat flour.  Soba noodles have fewer calories and more fiber and more protein than traditional pasta.

Sesame soba noodles, I love them.  I got hooked a few year ago when I bought a premade container at Whole Foods.  They are amazing to slurp, have a great nutty flavor and are high in fiber.  They can be served hot or cold or somewhere in-between which makes them great for a brown bag lunch.   Personally, I like them cold.  Like everything I cook, they are easy and FAST to make.  Boiling the water takes the most time with this recipe. The sauce is simple to make but bold in flavor with sesame, ginger, garlic and a touch of heat.  I like to pair these noodles with my 5 Ingredient Miso Chicken. If you want to amp up the veggies in this dish, go for it.  Carrots, snap peas, bell peppers, and cabbage all taste great in these sesame soba noodles.

If you’re GF you’ll be happy to know that soba noodles are a healthy gluten-free alternative to traditional pasta.  They have more fiber and protein than traditional pasta too.  Also, lower in calories than traditional pasta, each cup of cooked soba noodles contain 113 calories.  White spaghetti, on the other hand, contains 220 calories per cup, and a whole-wheat spaghetti contains 174 calories.

Sesame Soba Noodles

Ingredients

  • 1 package soba noodles
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbs rice wine vinegar
  • 1/4 cup noodle water
  • 4 scallions sliced thin
  • 1 tsp crushed red pepper
  • 1 knob ginger grated
  • 1 clove garlic grated
  • 1 bunch cilantro chopped
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp toasted sesame seeds

Instructions

  1. Bring a pot of salted water to a boil.
  2. Add the soba and cook until al dente.  Drain noodles (if noodles are cooked in adavnce of sauce retain 1/4 cup of the water -See step 3 and 4).  In the pot add cold water and ice cubes.  Add noodles to the ice bath, rinse well and drain.
  3. While noodles are cooking add  soy sauce, rice wine vinegar, crushed red pepper, sesame oil, garlic, ginger, 1/2 the scallions, 1/4 the cilantro into a small saucepan.
  4. Bring dressing ingredients to a boil  Add 1/4 cup of noodle water. Cook for 2 minutes.
  5. In a large bowl, add noodles, scallions, salt, pepper, dressing, cilantro. Toss until combined.
  6. Garnish with sesame seeds.

Tips for making Sesame Soba Noodles

Sesame Soba Noodle Salad1. Try to find 100% buckwheat noodles.  Some noodles are also made with Whole Wheat Flour.

2. Rinse your noodles after cooking or they will be a gummy mess.  Seriously, do not skip this step.  It only takes a few minutes and is key to making delicious sesame soba noodles.

3. Cook your sauce.  The garlic will be overpowering if it is not cooked.  If you prefer Garlic Sesame Soba Noodles, then hey, go for it.
