Reheating pizza or make garlic bread is about the only time I turn on the oven during the summer months. From June thru September I typically stick to grilling and and quick stove top meals. I feel like using the oven is a criminal act against my air conditioner. Last week with temps in the 60s (which totally stinks by the way) I felt no remorse making roasted chicken.
I love the flavor combination of lemon and rosemary. The bright citrus and sweet rosemary are bright and refreshing. It’s the perfect dish for a cool summer night.

Roasted Lemon Rosemary Chicken

Ingredients
- 1 whole chicken washed & dried and broken down into 4 pieces
- 2 Tablespoons olive oil
- 2 large springs fresh rosemary diced finely
- 1 garlic cloves minced
- zest of 1 lemon and juice from one lemon
- salt & pepper
Instructions

Preheat oven to 425.

Place chicken in an oven safe skillet.

Squeeze lemon juice over chicken.

Generously season chicken with salt and pepper, garlic, lemon zest and rosemary.

Cook for 45 minutes basting every 15 minutes.

Let chicken cool for 10 minute before serving.
