Shito Peppers
 
 Sometimes the best food is simple food,  roasted vegetables being a prime exemplar.  I think that is why I fell in love with grilled shishito peppers this summer.  Shishito pepper are small thin-skinned peppers with a smokey sweet flavor and silky texture.  About one out of every ten peppers is spicy.  So every so often you get a little kick of heat which I think makes these peppers all the more fun to eat.  

They are easy to make and taste fantastic with just a little sea salt.  I eat them as a snack or they make a fantastic side dish to grilled meat.    I actually cannot wait to grow these peppers in my garden next year. 

 Blistered Shito Peppers

Grilled Shishito Peppers

Prep Time 11 minutes
Cook Time 11 minutes

Ingredients

  • 4 cups Shishito peppers
  • 2 tbs Olive Oil
  • 2 tsp sea salt or kosher salt

Instructions

  1. Over medium heat, heat oil in a large heavy skillet.
  2. Cook peppers, turning occasionally, until they begin to blister on all sides.
  3. Sprinkle with salt and serve immediately.
