 Olive Oil Roasted Tomato Bread

Making a great dish starts with a good foundation of quality ingredients. Freshness, flavor, smell, texture – they all matter when making a delicious meal. Cooking with subpar fixings can be the difference between a mediocre dish and a fabulous dish.  Even a simple grilled tomato basil bread can be elevated with great ingredients. Using high quality olive oil and balsamic vinegar can make the tomatoes taste sweeter and the basil taste brighter.

Tomato Basil Bread

Villa Gabriella organic olive oil ($25.00 per bottle) is hand harvested with care to ensure the fruit is gathered only when ready.  It has a bold, grassy and peppery flavor without being harsh or rancorous. It is a true compliment to produce but stands up to bread and cheese.

With summer and tomato season right around the corner, grilled tomato basil bread is a great elevated seasonal ingredient dish.  It’s simple to make and can be enjoyed a snack, appetizer or paired with a large salad as a main entree.

Grilled Tomato Basil Bread

Prep Time 10 minutes
Cook Time 11 minutes
Servings 8

Ingredients

  • 1 baguette sliced in half
  • 2 large vine ripe tomates
  • 3 tbs Villa Gabriella olive oil
  • 2 tbs Villa Gabriella balsamic vinegar
  • 6-8 leaves of basil chiffonade
  • 2 oz parmesan cheese thinly sliced
  • salt and pepper to taste

Instructions

  1. Thickly slice tomatoes, brush with 1 tbs of olive oil. On an oiled pan, broil until the tomatoes start to sizzle and black marks begin to appear (about 5 minutes). Remove and let cool. Brush bread with olive oil and lightly toast under broiler (about 3 minutes).
  2. Top toasted bread with tomatoes (grilled side up). Drizzle with 1 tbs olive oil and 2 tbs balsamic vinegar. Top with basil and parmesan cheese. Sprinkle with salt and pepper to taste.

Recipe Notes

Do not salt tomatoes before cooking. Use a pancake turner to remove tomatoes from grill pan.
