Chipotle Taco

Tacos Tuesdays, they might be as cliche as Meatless Mondays but I don’t care. I  love tacos.  Really, I’ve never met a taco that I didn’t like. So yes, I enjoy tacos every Tuesday night.  I not only enjoy them because of their awesome taste but because they are fast to make.  In less than a half hour I can have dinner on the table.  This is key on Tuesdays because I  go to the gym for my favorite group exercise class, Music Video Cycling and  I don’t walk into the house until 7pm.   

Chipotle Cilantro Goat Cheese Taco

I love those tacos because they are not only tasty (chipotle chicken goat cheese..the creaminess of the cheese balances the spiciness of the chipotle) and easy to make but cleanup is quick too.  One pan (line with parchment paper) and your cleanup is virtually nil.  My final plug for these tacos, the leftovers make a fabulous taco salad the next day.  

And if all that didn’t persuade you to make these tacos then how about this..each taco is less than 170 calories INCLUDING a generous dollop of goat cheese.  Now who wants a taco?

Chipotle Pepper and Cilantro Goat Cheese Tacos

Prep Time 15 minutes
Cook Time 25 minutes
Servings 6 -8 tacos
Calories 170 kcal

Ingredients

  • 1 1 b boneless skinless chicken breast cut into thin strips
  • 1 12 oz chipotle pepper in adobo sauce
  • 1 red bell pepper seeded and cut into strips
  • 1 teaspoon oil
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 small round of goat cheese
  • 1/2 cup of cilantro leaves washed
  • 8 to rtillas

Instructions

Chicken and Peppers

  1. Heat oven to 425 degrees.
  2. Line cookie sheet with foil or parchment paper.
  3. In a bowl, mix Chicken with chipotle pepper and adobo sauce.
  4. One half the baking sheet place chicken and peppers on the other half place bell peppers and sprinkle with salt and pepper.
  5. Bake 15 to 20 minutes, turning once, until chicken is no longer pink in center and peppers being to brown on edges.

Cilantro Goat Cheese

  1. Reserve a 12-16 leaves of cilantro and chop remaining.
  2. In a small bowl combine cilantro and goat cheese.

Taco

  1. On a tortilla shell, place 2-3 strips each of chicken and peppers. Dollop with goat cheese and garnish with cilantro.
