Creamy Pasta and Broccoli

Summer is here!!! Summer is here!!!  This means two things:

1. Easy dinners 

2. Fresh garden vegetables 

As someone who love to cook elaborate dinners are a put on the shelf.   This creamy spaghetti a summertime go to.  I love the spicy roasted broccoli with the creamy spaghetti. The crispy bits on the broccoli are the bomb.

Spicy Roasted Broccoli and Creamy Pasta

If you’re not a fan of broccoli you can really use any other vegetable you like or you can add a protein like roasted chicken or some sausage.  

Roasted Spicy Broccoli

Now I know what you’re thinking…creamy pasta, that has to be filled with fat and calories.  Well actually, no.  I use Asiago Laughing Cow cheese as the base of this zesty cheese sauce.  Each wedge is 35 calories and had a ton of flavor.  

Laughing Cow Cheese and Basil

I combine milk with the cheese and then  amp up the flavor with fresh basil. Boom! Instant creamy pasta sauce.  THE Best part of this recipe, you can go from table to bowl in about 20 minutes.

Creamy Asiago Spaghetti with Spicy Roasted Broccoli

Easy and FAST pasta with a creamy cheese sauce and spicy vegetables.

Prep Time 5 minutes
Cook Time 20 minutes
Servings 6 servings

Ingredients

Roasted Broccoli

  • 1 lb broccoli floretes
  • 1 tb olive oil
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 tsp garlic powder
  • 1 tsp crushed red pepper

Creamy Pasta

  • 1 lb spaghetti
  • 6 Laughing Cow Asiago Wedges
  • 1/2 cup milk any kind I prefer 2%
  • 1 cup basil chopped
  • 1/4 cup pasta water

Instructions

  1. Preheat over to 425 degrees.
  2. On a roasting pan place broccoli.
  3. Drizzle with olive oil.
  4. Sprinkle with salt, ground pepper, garlic powered and crushed red pepper.
  5. Cook for 15 minutes or u until broccoli is tender but still crisp.

Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add pasta, and cook until al dente. Reserve 1/4 of pasta water.

Cheese Sauce

  1. While the pasta is cooking, in a large pan on low, bring milk to a simmer. Add Laughing Cow cheese wedges. Slowly whisk and melt cheese wedges.
  2. When milk and cheese are melted. Add a 1/4 of the pasta water that is cooking. Whisk until combined.
  3. Add basil and cooked pasta. Toss until pasta is combined with sauce.
  4. Add broccoli and toss so broccoli is combined with pasta.
  5. If you like a cheesier pasta double recipe for cheese sauce.
