So let me start out by saying that this is not your typical creamy or vinegar classic coleslaw. It is a zesty flavor bomb slaw that quite frankly once you start eating you won’t be able to stop. And ONLY 6 INGREDIENTS!!!! Okay, 7 if you add the optional oil. But quite frankly I don’t think this slaw needs it. So you add that nugget of information and you have a HEALTHY 6 INGREDIENT SLAW that you will not be able to stop eating. (Pst….Weight Watchers folks…this is ZERO POINTS!)
Why is this sooo sooo good?
Onion = Bit of Bitter
Ginger= Zippy Spice
It’s an explosion of flavor I tell you. All the flavors just meld together.
Ginger Lime Mango Slaw
- 1/2 of a small head of red cabbage sliced thin
- 1 mango cut into matchsticks
- 1 small red onion sliced very thin
- 1 lime
- 6 sprigs of cilantro chopped
- 1 tablespoon of grated fresh ginger
- 2 tablespoons vegetable oil optional
- 1 teaspoon salt
- 1 teaspoon pepper
In a large bowl add mango, cabbage, onion, cilantro.
In a small bowl add ginger, salt, pepper, zest and juice lime. Optionally add oil. Whisk together.
Top mango cabbage blend with Ginger lime dressing. Toss.
This slaw is great as a side dish or as a garnish. I love it on Chicken and Steak. It also tastes amazing added to a turkey sandwich. But the way I enjoy this slaw the most? A top a fish taco. SO FRESH, SO SUMMER, SO GOOD.
A quick bit of advice on cutting the mango. I like to make little slices in the mango then scoop it out of the skin. You will end up with perfectly cut mango matchsticks.
When slicing, do it over the bowl that has the cabbage, this way any mango juice that drips is added back to the dressing.
