Fried Green Tomatoes with Sweet Dijon Sauce is a healthy take on the Southern Classic.

Fried Green Tomato with Sweet Dijon Dipping Sauce

Every October I fear the first frost and pick everything that is growing in my garden.  I end up with a lot of green tomatoes.  There are many ways you can use green tomatoes but the classic southern fried variety is one of my favorites.

Fried Green Tomato Dipped in Sweet Dijon Sauce

The issue with traditional fried green tomatoes is that they are, well, fried.  This version, Fried Green Tomatoes with Sweet Dijon Sauce, par bakes them prior to frying in a small amount of oil.  The dipping sauce is also low in fat and calories because it is made out of Greek yogurt, dijon and a touch of agave.

Ingredients

Fried Green Tomatoes

  • 4 green tomatoes
  • 1/4 cup cornmeal
  • 1/4 cup Bread Crumbs
  • 2 tbs of Canola Oil
  • 1 egg
  • 1/3 tbs milk
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp  chili powder
  • 1/4 tsp cayenne pepper

Dijon Dippin Sauce

  • 1/4 cup low-fat Greek Yogurt
  • 2 tsp agave
  • 2 tbs dijon mustard

Instructions

Fried Green Tomatoes

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Slice green tomatoes into slices about a 1/4 inch thick.
  3. In a bowl, egg and milk ingredients.
  4. In a separate bowl, mix dry ingredients.
  5. Dip each slice of tomato in wet ingredients.  Dredge in dry ingredients.
  6. Place on a lined baking sheet and bake for 15 minutes.
  7. In a shallow pan heat oil.  Fry each tomato for 1-2 minutes on each side until golden brown.

Dijon Dipping Sauce

  1. In a bowl, mix all ingredients until combined.

Cooking Tips for Fried Green Tomatoes with Sweet Dijon Sauce

Green Tomatoes

Use small to medium sized tomatoes.  Big tomato slices are difficult to eat.

Seasoned Coating Fried Green Tomatoes

Amp up or down the seasoning in your cornmeal breadcrumb mix.  If you like spicy add more cayenne. Just be careful,  don’t add too much or you will end up with FLAMING HOT Fried Green Tomatoes with Sweet Dijon Sauce

Ingredients Fried Green Tomatoes

Use shallow bowls for you dry and wet dredges.

Line your baking sheet with parchment paper for easy cleanup.
Cooking Fried Green Tomatoes
Make sure the pan and oil are hot before cooking your tomatoes.  Also, don’t overcrowd the pan. It is better to cook them in small batches.

    I have nevr EVER tried green tomatoes. This looks so yummy.
    I just planted my first tomatoes ever – so i might get to try this in a few months.
