Chicken Tacos with Fire Roasted Red Peppers and Goat Cheese are a unique take on traditional chicken tacos. With bold flavors, you would never expect these tacos to be less than 350 calories for a two taco serving.

Fire Roasted Red Peppers and Goat Cheese Chicken Taco

This recipe was the very first recipe I ever posted 2010.  Today, I’m giving this recipe a new life because it’s fast to make, healthy and, most important, really REALLY good.

What makes these Chicken Tacos with Fire Roasted Red Peppers and Goat Cheese special is the goat cheese.  The goat cheese adds a rich tangy flavor.  And, because goats cheese is pungent a little goes a long way. This means you get great flavor without a lot of added fat and calories.

Fire Roasted Red Peppers

This recipe can be made in around 30 minutes and the clean-up is quick with only two pans. If you want to save even more time, buy a jar of fire roasted red peppers.  Personally, I think fresh is better but, there is no shame in taking a shortcut with these tasty tacos. If you do decide to use canned peppers purchase peppers where you can see bits of char.  The char adds depth to the flavor of these tacos.

Chicken Tacos with Fire Roasted Red Peppers and Goat Cheese

Chicken Tacos with Fire Roasted Red Peppers and Goat Cheese are a unique take on traditional chicken tacos. With bold flavors, you would never expect these tacos to be less than 350 calories for a two taco serving.

Ingredients

  • 1.5 pound Chicken breast sliced thin
  • 2 Red Peppers or 1 jar Fire Roasted Red Peppers sliced thin
  • 1 small log goat cheese
  • 1 small onion sliced
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoons cayenne pepper
  • 2 cloves crushed garlic
  • 4 teaspoons of  vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 12 corn tortillas
  • 1 lime for garnish
  • 1 bunch cilantro for garish

Instructions

Roast Red Peppers

  1. Cut peppers in half and remove pith and seeds.
  2. Place peppers on a sheet pan and place under broiler for 10 minutes.  Flip peppers after 5 minutes.
  3. Remove from pan, let cool and slice thin

Tacos

  1. In a large skillet over medium heat, heat oil.
  2. Add onions and garlic.  Cook until soft.  Add peppers and toss until combined.
  3. Remove from pan.
  4. Add 2 teaspoons of oil to pan
  5. Add chicken and spices.  Cook 6-10 minutes, until browned and firmly cooked through.
  6. Add sliced peppers and onions.
  7. Serve with fresh tortillas and crumbled goat cheese.

Recipe Notes

I served with fresh limes and cilantro for garnish.
